HARVEST & WINEMAKING PROCESS
2023. It was harvested at the end of August when it did not rain during the whole month and it was also mild, facts that favoured the perfect sanitary state of the grapes and their ripening.
Grapes selected and harvested by hand in vineyards located in Porreres (Mallorca – Balearic Islands). Traditional production methods, without the addition of yeasts or bacteria (according to conditions defined by DEMETER INTERNATIONAL). Spontaneous fermentation in INOX tank with controlled temperature and then for 5 months in first year French oak barrels.
SENSORY ANALYSIS
Visual: Clear, bright, pale yellow with greenish tones. Tears are visible in the glass.
Nose: Very high intensity, floral aromas and exotic fruits such as lychee, characteristic of the Viognier variety. Aromas of clove and cinnamon emerge, typical of its first year in oak barrels.
Tasting phase: It is a well-balanced and full-bodied wine. Serving

Fish, pasta and rice dishes. Also as an aperitif.

CATA'S NOTE
Clean and bright. Greenish yellow in color. Ripe nose with notes of white flowers, pear, apricot, elderberry and a light note of smoke. In the mouth it is fatty, sweet, unctuous, but with a very good length and freshness. Mineral and slightly bitter that enhances the tension and persistence of the wine.
