HARVEST & WINEMAKING PROCESS
2023. The Sauvignon Blanc was harvested in the first week of August, when it did not rain during the whole month and it was mild, which favoured the perfect health of the grapes and the ripening process.
Grapes selected and harvested by hand in vineyards located in Porreres (Mallorca – Balearic Islands). Traditional winemaking methods, without the addition of yeasts or bacteria (according to conditions defined by DEMETER INTERNATIONAL). Spontaneous fermentation took place in stainless steel tanks, and then halfway through fermentation it was transferred to French oak barrels where it would finish fermentation for a total time of about 4 months.
SENSORY ANALYSIS
Visual: Frank, bright, straw yellow. Tears can be seen in the glass.
Nose: Very high intensity with balsamic and heathery aromas, characteristic of the Sauvignon Blanc variety.
Tasting phase: It is a fresh, velvety wine, with a lot of volume and balance. Very long aftertaste.

CATA'S NOTE
Clean and bright. Greenish yellow in color. Ripe nose with notes of white flowers, pear, apricot, elderberry and a light note of smoke. In the mouth it is fatty, sweet, unctuous, but with a very good length and freshness. Mineral and slightly bitter that enhances the tension and persistence of the wine.
