Viognier is already known for its aromatic profile, oak aging further enhances its bouquet. It introduces additional layers of complexity, including notes of butterscotch, honey, and nuts, which mingle with the wine’s typical floral and fruity aromas. Viognier Barrique wines often have the potential for aging gracefully due to the structural changes imparted by oak aging. Over time, the wine may develop more nuanced flavors and evolve into a more complex expression of the varietal.

HARVEST
The summer of 2005 was dry and warm, providing optimal conditions for ripening and ensuring the berries remained in excellent health.

14.5% vol.
WINEMAKING PROCESS
Grapes were hand-harvested at our vineyards in Porreres, Mallorca, Balearic Islands. Following DEMETER INTERNACIONAL standards, we employed traditional methods without added yeasts or bacteria. Spontaneous fermentation occurred in stainless steel tanks, followed by 12 to 15 months of aging in 225-liter French oak barrels. Alcohol: 14.5% vol.
SENSORY ANALYSIS
Visual: Tile red with violet hues of medium depth and intensity.
Nose: Aromas of ripe fruit emerge, complemented by subtle spicy and toasted notes derived from the French oak barrels.
Palate: The palate confirms the wine’s balance, featuring concentrated aromas of ripe black fruits supported by integrated tannins and well-balanced acidity.
