HARVEST
The summer of 2020 was dry and mild, perfect for the ripening and phytosanitary conditions of the berries. The Syrah was harvested in the second week of September.

WINEMAKING PROCESS
The grapes were selected and harvested by hand near the winery in Porreres. Traditional winemaking methods were used with no added bacteria or yeasts, relying solely on spontaneous fermentation in accordance with the rules stipulated by DEMETER INTERNACIONAL. Temperature-controlled fermentation took place in stainless steel tanks, and aging occurred in first-year French oak barrels for about 24 months before bottling.
SENSORY ANALYSIS
Visual: Cherry red with violet touches and a deep robe. Medium-high intensity.
Nose: Clearly representative of the variety, with emerging aromas of licorice and a slightly spicy touch. Subsequently, a smoky and roasted note from the barrel aging becomes apparent.
Palate: Medium body, with soft and velvety tannins coated by red fruits that emerge through the long finish. Fresh, pure, and very clean fruit.
