Son Naava Cabernet Amphorae 2021
Viognier is already known for its aromatic profile, oak aging further enhances its bouquet. It introduces additional layers of complexity, including notes of butterscotch, honey, and nuts, which mingle with the wine’s typical floral and fruity aromas. Viognier Barrique wines often have the potential for aging gracefully due to the structural changes imparted by oak aging. Over time, the wine may develop more nuanced flavors and evolve into a more complex expression of the varietal.

HARVEST
2021 was a dry and mild year, ideal for the ripening and phytosanitary conditions of the berries. The Cabernet Sauvignon was harvested in the last week of September.

14.5% vol.
WINEMAKING PROCESS
Selected grapes harvested by hand in vineyards located in Porreres (Mallorca – Balearic Islands). Traditional and biodynamic methods under DEMETER INTERNACIONAL regulations were used with spontaneous fermentation without added yeast. Fermented in a stainless steel tank and aged in Italian stoneware amphorae for 12 months.
SENSORY ANALYSIS
Visual: Brick red with violet tones. Very high intensity. Deep robe.
Nose: Fine fruity and lactic aromas. It lacks oak aromas and for this reason is true to the grape variety.
Palate: Full-bodied, with soft and velvety tannins coated by ripe black fruits that emerge through the long finish. Very dense, pure and clean fruit.
